Apiaries set up in various locations enable the beekeeper to offer you honeys with totally different flavors:
- Mountain honey harvested at Albiez-le-Jeune in Savoie
- Chestnut honey harvested in Isère and Savoie
- Spring honey harvested in Isère
- All-flower honey harvested in Isère and Savoie
- Acacia honey harvested in Isère
In the plains, bees gather early spring flowers of rapeseed, cherry and hawthorn, producing a very sweet, white and creamy spring honey.
Then comes the flowering of the acacia, a tree that yields a profusion of nectar if weather conditions are favorable. Acacia honey is light yellow in color, with a very mild flavor and does not crystallize.
In August, Edith also harvests an amber-colored chestnut honey, with a pronounced, sweet flavor, as well as an all-flower honey.
In Albiez-le-Jeune, she harvests a mountain honey that reflects the botanical richness of the environment.
Edith makes handcrafted marshmallows, nougat, cara'miel and gingerbread with her chestnut honey:
- Cara'miel: Handcrafted with chestnut honey and fleur de sel from the Ile de Ré.
- Almond nougat: Handcrafted from mountain honey.
- Nougat with almonds, walnuts and hazelnuts : Handcrafted from chestnut honey
- Marshmallow: Handcrafted from chestnut honey
- Gingerbread: Handcrafted from chestnut honey
- Honey soap: Handcrafted from mountain honey
If you're not far away, you can also meet the beekeeper at the Albiez-Montrond market on Thursday mornings in season.

Originally from Vienne, Edith has always loved the mountains and bees. Her passion comes from her father, an amateur beekeeper. So it's no coincidence that she and her partner moved to Albiez-le-Jeune in 2004. They renovated a farmhouse dating from 1878, transforming it into a bed and breakfast. At the same time, Edith worked in tourism and then in industry. The comings and goings in the valley and the work in the factory
bored her. Edith needs meaning in what she does. In 2017, she
changed her life and became a beekeeper! Today, she is in charge of 200 hives, mainly populated by black bees, the most hardy of all.
